Temaki

London's first handroll bar, Temaki is challenging diners to perfect the art of the perfectly executed sushi roll. Hint: it's harder than you might think.

Now, this is the kind of classroom you want to be in. Sushi School has reopened and everyone wants to be a pupil, especially once they've spotted the oh-so-chic classroom that is ultra-modern, swish and cool. A giant wooden bar awaits, matching wooden stools in a uniform (no pun intended) line and the glass wall looking out over the neighbouring Brixton market row. The beauty of fine craftsmanship is everywhere to be seen, letting students know that Japanese cuisine is one of exactness and precision.

No pressure, then! Seriously though, it's all about the experience and once you've had a go at rolling a trout temaki with cucumber and shiso, teriyaki mushrooms with seasonal vegetables, or prawn tempura with spring onion, you're one step closer to becoming a master.

If you fancy a break, allow the chefs to work their magic with some yellowtail sashimi, monkfish karaage or homemade miso soup. Then, celebrate your accomplishments with a glass of sake or three and vow to come back again for another class next week. It's all in the name of education...
