Seasonal food with all the effortless elegance of the traditional European bistro, Hispi is a hidden treasure in Disbury.
Hispi is a people's bistro where regional and seasonal ingredients are allowed to shine. Housed in what used to be a bank, Hispi has made the space its own with rustic flare here and there, an exposed kitchen drumming up the excitement and an uncluttered aesthetic that gives diners space to breathe and relax.
If you're planning on joining Hispi for lunch, prepare for humble ingredients that have been transformed into decadent mouthfuls. Take the everyday cabbage that is stuffed with wild mushrooms, roasted and served with a confit garlic mash. Or the pork ribeye, a vastly underrated cut that is brought to life with salted cucumber and a luscious rocket salad. And you know that every afternoon has to begin with a baked vanilla yoghurt...
For dinner, the theme continues with British lamb's breast with an earthy mash, confit duck leg with winey red cabbage and sirloin beef so big and rich that it's perfect for sharing alongside some truffle and Parmesan chips. The same applies for dessert where evenings in Manchester deserve a Chocolate Oblivion. After a dramatic, chocolatey finish, the evening is yours to do as you please.
